Vegan Chia Pancakes

A super cool friend of mine created this masterpiece using our Chia Mix and we think its pretty great. You can make this receipe using a traditional pancake mix aswell just adding in any of our chia flavours.

1 1/2 Cups All Purpose Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Sea Salt
3 Tablespoons of Plant Basics Chia Mix
1 1/2 Cups Plant Milk
1 Teaspoon Apple Cider Vinegar
1 Teaspoon of Vanilla Extract (optional)

Mix dry ingredients in one bowl then mix wet ingredients in a seperate bowl and combine. Do not over mix. The vinegar and plant milk will curdle which helps bind the mix. Allow to rest for 10mins then cook 1/4 cup scoops over a medium heat in a lightly oiled non-stick pan. Flip when bubbles appear in the middle of each pancake and the edges appear dry. 3-4mins each side.

Enjoy with berries, coconut yoghurt and maple syrup.
